Cottage Cheese Dill Muffins
*adapted from The Complete Muffin Cookbook
1 1/2 cups whole wheat flour
1 1/2 cups AP flour
1 TBSP baking powder
1/4 tsp sea salt
2 TBSP wheat bran
1 1/4 cup milk
1 cup cottage cheese
1/4 cup canola oil
1 large egg
1 TBSP honey
2 TBSP dill seeds*
1. Preheat your oven to 400 degree. Sift together all of the dry ingredients except the bran in a large bowl.
2. Whisk together the wet ingredients in a medium bowl. Add the dill to the wet ingredients and stir to combine.
3. Pour the wet mixture and the dry mixture and stir until just combined. Batter will be very thick.
4. Spoon into twelve greased muffin tins and bake for 15 to 20 minutes. Allow to cool for five minutes in pan before removing.
