2 1/2 cups White Whole Wheat Flour (AP works great too)
1 1/2 tsp baking powder
1/2 tsp salt
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp cardamon
1 cup applesauce
3/4 cup brown sugar
3/4 cup buttermilk
1/3 cup maple syrup
2 eggs
3 TBSP oil
1 tsp vanilla extract
Optional: handful of raisins or toasted nuts
1. Preheat your oven to 350 degrees and grease two nine inch cake pans or two muffin tins.
2. Whisk together your dry ingredients and spices in a large bowl.
3. In a medium bowl, whisk together your wet ingredients until well-combined.
4. Stir your wet ingredients into your dry ingredients until just combined. Be careful to not overmix! Stir in your optional goodies.
5. Pour into cake pans or distribute into your muffin tins. Bake in a preheated oven for 20-30 minutes (depending on what pan you use). Cakes are done when a toothpick inserted in the center comes out clean.
6. Allow to cool on a wire rack before serving.
