Maple Spice Muffins
1 1/2 cups all purpose flour
1/2 cup sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt
1/3 cup oil
1 egg
1/4 cup milk
1/4 cup maple syrup.
Brown sugar for sprinkling on top of your muffins
1. Preheat your oven to 375 degrees. Line or grease a 12 tin muffin tray (or a 24 tin mini-muffin tray works great for this recipe!)
2. In a large bowl, whisk together the flour, sugar, soda, salt and spices.
3. In a small bowl, whisk together your oil, egg, milk and maple syrup.
4. Fold your wet ingredients into your dry ingredients and stir until just moistened. Your batter will be fairly thick.
5. Distribute evenly in your muffin tins and sprinkle with a slight dusting of brown sugar.
6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
