Please make these muffins...they are moist, spice-filled and perfect with a cup of tea on a cold day.
2 Cups White Whole Wheat Flour (Whole Wheat works fine)
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/4 cup vegetable oil
2 eggs, lightly beaten
3/4 cup honey
1 6 oz container of vanilla yogurt
1 Cup of your favorite granola...I used Pumpkin Flax Granola from Whole Foods here
-Preheat your oven to 350 degrees. Grease or line 16 muffin tins. Peel and mash your baked sweet potato and set aside.
-In a large bowl, whisk together your flour, soda, salt and spices. Stir in your oil, eggs, honey and yogurt until the batter is just moistened. Add in your mashed sweet potato and stir a few more times. Remember...the less you mix, the softer your muffins will be!
-Spoon your batter evenly into your muffin tins.
-Top with a sprinkle of your favorite granola
-Bake for 15-20 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
