I've had one request for Strawberry Rhubarb Pie, which will be coming soon, I promise!
1 single all-butter pie crust
2 cups of mashed, cooked sweet potato
3/4 cup brown sugar
1/4 cup butter
1 cup evaporated milk
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp nutmeg
1/2 cup granulated sguar
3 eggs
1 TBSP vanilla
2. In a medium saucepan, combine sweet potato, butter, brown sugar, spices and 1/2 cup of evaporated milk. Over medium heat, stir until butter is melted and sugar fully incorporated. Remove from heat and allow to cool.
3. In a separate bowl, whisk the eggs and gradually add the sugar and remaining 1/2 cup of evaporated milk. Pour the cooled sweet potato mixture into the egg mixture and stir to combine.
4. Pour filling into pre-baked pie crust and bake in a 350 degree oven for 45-55 minutes or until filling has just set. Remove and let cool for at least one hour.
