When we lived in Baltimore, Ryan and I were introduced to an amazing concept--a bakery that served only pies, and really good pies at that. Dangerously Delicious Pies has taken Baltimore by storm, and people regularly line up to shell out 7-8 dollars for a slice of their handcrafted delights. Growing up with a family that loves pie and a Grammi that can bake pies better than anyone I know, I began to think about the possibility of opening up my own pie shop in some other city in this big, beautiful country.
So over the course of this blog, I hope to work on a lot of different pie recipes. I love baking pie, and I love eating it even more. If you have any suggestions for pies you might want me to make, let me know! I'm hoping to bake a new pie every couple of weeks, and we'll see where it goes!
2 1/2 cups AP flour
1 TBSP sugar
1 Tsp Salt
2 sticks VERY COLD butter
1/2 cup of ice water (not including ice)
1. Whisk together flour, sugar, and salt in a large bowl.
2. Cut your VERY COLD butter into small pieces and refrigerate for a few minutes if butter begins to melt
3. Using a pastry cutter or a fork, cut your butter into your flour mixture until course crumbs begin to develop. You can also use your hands, which is just a lot of fun.
4. Once incorporated, pour ice water over crumb mixture and begin to knead dough until a smooth ball forms. You may need to add more water but do so cautiously.
5. Divide dough into two discs, wrap with plastic wrap and store in refrigerator until ready to use.
7 Cups thinly sliced and peeled apples
1/3 cup sugar
1 Tsp cinnamon
1/2 tsp nutmeg
1 TBSP freshly lemon juice
2 TBSP flour
1 cup flour
2/3 cup brown sugar
1 tsp cinnamon
1/2 cup oats
1 stick butter
1. Preheat your oven to 400 degrees. Use one disc of refrigerated pie dough. Roll out on a floured surface and carefully transfer to deep dish pie pan.
2. Combine apples with sugar, cinnamon, nutmeg, lemon juice and flour. Stir to combine. Pour into pie pan and smooth apples so that the surface of your pie is flat.
3. Bake in oven for 30 minutes. Meanwhile, combine the flour, brown sugar, oats and cinnamon in a food processor. Pulse until combined. Add butter, in small pieces, and continue to pulse. Pour mixture into a bowl and work with hands until larger crumbs form. Store in refrigerator until ready to use.
4. Remove pie from oven and pour crumb mixture over top, starting in the center and then spreading with a spoon or your hands. (This makes a lot of crumb mixture, so use as much as you would like and save the rest for another recipe)
5. Return to oven and bake for an additional 30-35 minutes. Allow to cool for at least one hour, and please, please, please serve with ice cream!
